JalapeñO Omelet Recipe

The easy way to make a moist, fluffy omelet.

Ingredients
3 eggs
2 tbs fat-free yogurt
1 tsp olive oil
1 chili pepper, jalapeño, seeded and chopped
1/2 tsp garlic, puréed
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cumin
Directions
  1. Beat eggs with yogurt, seasonings, and jalapeño.

  2. Heat oil in a nonstick skillet and pour eggs in.

  3. Cover and cook 10 minutes on medium-low heat until eggs are cooked through. Cooking time depends on width of skillet & depth of omelet.
