Blueberry Cornmeal Pancakes (Makes 7 Pancakes) Recipe

Makes 7 servings


These are great pancakes that taste better, are more filling and more forgiving than the full fat version. Bet you can't eat more than 3!

Ingredients
1/2 c all purpose flour
1/3 c yellow cornmeal (1/4 c stoneground)
1 tbsp sugar
3/4 tsp baking powder
1/8 tsp baking soda
3/4 c skim milk
1 tbsp lemon juice
1 large egg
1/2 c frozen blueberries
1 1/2 tsp lemon zest
2 tbsp unsweetened applesauce
1 tsp salted butter, for frying
Directions
  1. Heat pan/ griddle to medium low temperature

  2. Mix dry ingredients with a wisk

  3. Seperate egg

  4. Whisk egg white till soft peaks form

  5. Mix rest of wet ingredients besides egg white and butter together

  6. Pour wet mixture into dry mixture

  7. Fold in egg white

  8. Fold in blueberries

  9. Spoon 1/3 c pancakes onto hot pan with melted butter

  10. Spread batter out a bit until slightly flattened

  11. Flip once lots of bubbles form and brown other side

  12. Enjoy!
