Much yummier than commercial tinned beans.
| 8 | ounces dried navy beans |
| 1 | tablespoon vegetable oil |
| 1 | medium onion, finely chopped |
| 2 | garlic cloves, pureed |
| 400 | grams canned tomatoes, chopped |
| 1 | tablespoon tomato puree |
| 1 | teaspoon dried mixed herbs |
| 1 | salt and pepper, season to taste |
- Cook the beans and set aside.
- Heat the oil and fry the onion, until soft and then add the garlic, cook gently for 2 minutes contantly stirring. Add the tomatoes and tomato puree and mixed herbs cook for
- 5-10 minutes or until sauce has slightly thickened. Then blend to a puree with either a food processor or hand blender
- Pour the sauce over the beans season to taste and mix well and marinade for at least an hour.
- After an hour reheat and serve.
