Yummy! You won't even miss the wheat!:] This could be made gluten-free by subbing brown rice flour (or other gluten-free flour) for the spelt flour and the oats. The serving size is 2 cookies.
| 1/4 | cup butter |
| 60 | g egg |
| 1/2 | cup brown rice flour |
| 1 | cup soy flour |
| 1 3/4 | cups old fashioned oats |
| 1/2 | cup molasses |
| 1/2 | tsp baking soda |
| 1/2 | tsp salt |
| 1/2 | tsp ginger |
| 1 | tsp cinnamon |
- Preheat oven to 350 degrees.
- Cream the butter, sugar, and mollases in a mixer on medium speed.
- Reduce speed to slow.
- Slowly add in other wet ingredients, followed by the dry ingredients.
- Grease a cookie sheet.
- Drop batter by tablespoons on to the cookie sheet.
- Bake for 10-15 minutes in the 350 degree oven.
- Allow to cool before reoving from sheet.
