| 1 | portion (8 ounces) ground beef |
| 2 | cups frozen mixed vegetables, chopped small |
| 1/2 | white onion, chopped |
| 1/2 | bell pepper, chopped |
| 3/4 | cup tomato sauce |
| 3 1/2 | cups black beans |
| 1/4 | cup whole wheat flour |
| 2 | tbsp chili powder |
| 1 | clove garlic |
| 3 | cups water |
- Brown ground beef in a large soup pot or dutch oven; drain well and rinse crumbles to remove extra fat. Wipe pot to remove excess fat, leaving a thin coating for flavor. (optional)
- Add vegetables and cook lightly until just getting soft, add finely chopped garlic and chili powder and stir.
- Add tomato sauce and beans, mix all ingredients well for even cooking.
- Dissolve flour in a cup of hot water; add to the pot and stir well. Let cook for a few minutes until mixture begins to thicken.
- Add water to desired consistency. Cook on low temperature for at least 30 minutes; leave the lid on the pot for a thinner chili, leave off for thicker.
- Serve hot with crackers or cheese, or serve it on hotdogs!
