Basic Chili Recipe

Ingredients
1 portion (8 ounces) ground beef
2 cups frozen mixed vegetables, chopped small
1/2 white onion, chopped
1/2 bell pepper, chopped
3/4 cup tomato sauce
3 1/2 cups black beans
1/4 cup whole wheat flour
2 tbsp chili powder
1 clove garlic
3 cups water
Directions
  1. Brown ground beef in a large soup pot or dutch oven; drain well and rinse crumbles to remove extra fat. Wipe pot to remove excess fat, leaving a thin coating for flavor. (optional)

  2. Add vegetables and cook lightly until just getting soft, add finely chopped garlic and chili powder and stir.

  3. Add tomato sauce and beans, mix all ingredients well for even cooking.

  4. Dissolve flour in a cup of hot water; add to the pot and stir well. Let cook for a few minutes until mixture begins to thicken.

  5. Add water to desired consistency. Cook on low temperature for at least 30 minutes; leave the lid on the pot for a thinner chili, leave off for thicker.

  6. Serve hot with crackers or cheese, or serve it on hotdogs!
