Chicken Vegetable and Wild Rice Soup

Makes 6 servings

"This rich soup hits the spot on cold winter nights. It hits the spot every other day of the year too."

Ingredients
1 tablespoon Smart Balance light buttery spread
1 onion
4 carrots
2 celery stalks
2 cups broccoli florets
14 ounces Chicken broth (College Inn Light & Fat Free 50% Less Sodium)
1/2 cup water
6 ounces Success Brown Rice
8 ounces light cream cheese
1 cup chicken
1/2 cup Cheddar (Kraft 2% part skim shredded)
Directions
  1. Chop and boil 1 Cup Chicken

  2. Melt butter in a large pot over MEDIUM heat.

  3. Saute onion about 3 minutes or until tender.

  4. Add vegetables, seasoning packet from rice and water.

  5. Bring to a boil, add rice, reduce heat to MEDIUM-LOW, cover and cook 5 minutes.

  6. Add cream cheese and stir to melt.

  7. Add chicken and cook another 5 to 10 minutes until rice is tender.

  8. Add cheese and stir until melted.
