Ingredients

tablespoon Smart Balance light buttery spread |
| 1 |
onion |
| 4 |
carrots |
| 2 |
celery stalks |
| 2 |
cups broccoli florets |
| 14 |
ounces Chicken broth (College Inn Light & Fat Free 50% Less Sodium) |
| 1/2 |
cup water |
| 6 |
ounces Success Brown Rice |
| 8 |
ounces light cream cheese |
| 1 |
cup chicken |
| 1/2 |
cup Cheddar (Kraft 2% part skim shredded) |
Directions
- Chop and boil 1 Cup Chicken
- Melt butter in a large pot over MEDIUM heat.
- Saute onion about 3 minutes or until tender.
- Add vegetables, seasoning packet from rice and water.
- Bring to a boil, add rice, reduce heat to MEDIUM-LOW, cover and cook 5 minutes.
- Add cream cheese and stir to melt.
- Add chicken and cook another 5 to 10 minutes until rice is tender.
- Add cheese and stir until melted.
