gluten free zuchini bread

Makes 36 servings

best if you substitute a mix of flours and not just rice flour.

Ingredients
1 cup canola oil
2 cups sugar
3 eggs
1 tablespoon vanilla
2 cups shredded zuchini
3 cups rice flour
1 tsp baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
Directions
  1. mix together well, bake in little loaf pans filled about 1/2 to 3/4 full at 350 for 30-45 min.
