Yankee Cornbread Recipe

cast iron skillet cornbread

Ingredients
1 1/4 cups cornmeal
3/4 cup unbleached white flour
2 1/2 tsp baking powder
2 1/2 tbs sugar
1 tsp salt
2 eggs
3 tbs butter
1 cup buttermilk
Directions
  1. Season cast iron skillet and heat in oven at 425.

  2. Melt butter.

  3. Beat eggs.

  4. Mix all ingredients well.

  5. Once cast iron skillet is smoking, add all the batter.

  6. Bake for 20 minutes until slightly golden on top and toothpick goes through cleanly.
