cast iron skillet cornbread
| 1 1/4 | cups cornmeal |
| 3/4 | cup unbleached white flour |
| 2 1/2 | tsp baking powder |
| 2 1/2 | tbs sugar |
| 1 | tsp salt |
| 2 | eggs |
| 3 | tbs butter |
| 1 | cup buttermilk |
- Season cast iron skillet and heat in oven at 425.
- Melt butter.
- Beat eggs.
- Mix all ingredients well.
- Once cast iron skillet is smoking, add all the batter.
- Bake for 20 minutes until slightly golden on top and toothpick goes through cleanly.
