No Sugar Bran Muffins Recipe

basic bran that can be varied with adding other flours, other fruits (ie cranberries or blueberries) and nuts or raisins for variety.

Ingredients
2 cup skim milk
12 oz frozen apple juice concentrate
14 oz pumpkin
4 eggs
2 bananas
1 tsp vanilla
2 cups raw bran
2 cups all bran cereal
1 tbsp baking powder
1 tbsp baking soda
1/2 cup rolled oats
4 cups whole wheat flour
2 tsp cinnamon
1/4 tsp nutmeg
1 cup raisins
Directions
  1. Mix together first six ingredients.

  2. Mix separately the next five ingredients then add to fruit mixture and let stand for 15 minutes.

  3. Add the next 4 ingredients, put in silicone muffin pans and bake in preheated 375* oven for 30 to 45 minutes.
