This recipe is a homemade version of a Morning Star Farms product. Eggs, peppers, and onion in nugget form.
| 1/4 | cup Egg Substitute |
| 1 | tablespoon chopped green pepper |
| 1 | tablespoon chopped onion |
| 1 | teaspoon chopped jalapeno |
| 5 | Crackers (Keebler Town House Wheat) |
| 1/4 | cup Cheddar Cheese (2% part skim kraft shedded) |
- Pre-heat oven to 375 degrees.
- Spray mini muffin pan with non-stick spray.
- Fill each muffin slot about 3/4th full of egg substitute.
- Chop green pepper, jalapeno, and onion finely and mix them together.
- Sprinkle around a 1/2 Tablespoon chopped veggies over each egg filled muffin slot and allow them to begin to sink.
- Crush wheat crackers and sprinkle to cover the top of each egg muffin.
- Bake at 375 degrees for five- seven minutes (or until egg becomes solid.)
