Ingredients

cup Better'n Eggs Plus |
| 1/2 |
cup spinach, chopped |
| 1/2 |
cup tomatoes, diced |
| 2 |
tbsp onion, chopped |
| 2 |
tbsp cheese |
| 1 |
tsp curry |
| 1 |
salt and pepper to taste |
Directions
- simmer onion in water until translucent
- add curry seasoning
- add diced tomatoes, cook until softened
- add chopped spinach to steam
- add better than eggs
- let eggs set up
- add cheese, let it melt
