Easter Biscuits Recipe

Makes 20 servings


An easter treat

Ingredients
115 g caster sugar
110 g butter
1 egg, seperated
225 g plain flour
5 g mixed spice
85 g currants, mixed with sultanas rasins etc
3 tbsp milk
Directions
  1. Preheat the oven to 160 celcius, 325F or gas mark 3.

  2. Cream the butter and sugar, reserving one tsp of the sugar, until light and fluffy, then beat in the yolk. Continue by sieving the flour and then folding it in to make a stiff dough.

  3. Roll out the dough and cut out the biscuits using a floured cutter. Place them on a greased baking sheet and bake for 10 minutes.

  4. Remove from the over and brush with the egg white. Sprinkle with the remaining sugar and return to th oven for 5-10mins and remove when they are pale and golden brown. Cool on a wire rack.
