Blood Orange and Bulgar Salad Recipe

High in fiber, and delicious. Substitute vegetable stock or water for a vegan treat!

Ingredients
1/4 cup uncooked bulgur wheat
1 cup chicken stock
1/2 cup orange, chunks
1/8 cup green onion, finely chopped
1 tsp sesame oil
1/8 cup orange juice concentrate
Directions
  1. simmer bulgar wheat in chicken stock until all the stock is absorbed.

  2. Let wheat cool.

  3. Add remaining ingredients and toss.
