My family's classic recipe. Empty out four coffee cans and wash them out well to bake the bread in, and you get four round gift-size loaves that cut into about 8-9 slices each. (The tops are the BEST part!!)
| 3 | cups sugar |
| 1 | cup vegetable oil |
| 4 | eggs |
| 1 | tsp cloves |
| 1 | tsp ginger |
| 1 | tsp nutmeg |
| 2 | tsp cinnamon |
| 2 | tsp baking soda |
| 3 1/3 | cup all-purpose flour |
| 2/3 | cup water |
| 15 | oz pumpkin |
- Beat sugar, oil, and eggs together in a large bowl with electric mixer.
- Stir in spices and baking soda.
- Alternately add flour and water while continuing to mix at medium speed (be careful that you don't add too much flour or water at a time so it doesn't splatter).
- Optional: Stir in 1 cup chopped pecans (for additional nutritional value).
- Stir in pumpkin and mix until well-blended.
- Fill four coffee cans halfway with mixture and bake at 350 for one hour.
