Butternut Squash & Sweet potato Soup

Makes 6 servings

Lovely filling Soup, perfect for cold days

Ingredients
1 1/5 lbs butternut squash, chopped
750 g boniatos, diced
4 cups vegetable broth
115 g onion, chopped
2 cloves garlic, chopped
1 tbs parsley
1 tbs basil
1 salt
1 pepper
1 tsp cayenne pepper
1 tsp olive oil
Directions
  1. Saute onions and garlic in oil 5 mins

  2. add rest of ingredients

  3. Simmer for 40 mins

  4. Puree in blender

  5. return to pot and simmer for 5 mins

  6. Serve with Crusty Whole wheat/ Grain bread
