Lovely filling Soup, perfect for cold days

Ingredients

lbs butternut squash, chopped |
| 750 |
g boniatos, diced |
| 4 |
cups vegetable broth |
| 115 |
g onion, chopped |
| 2 |
cloves garlic, chopped |
| 1 |
tbs parsley |
| 1 |
tbs basil |
| 1 |
salt |
| 1 |
pepper |
| 1 |
tsp cayenne pepper |
| 1 |
tsp olive oil |
Directions
- Saute onions and garlic in oil 5 mins
- add rest of ingredients
- Simmer for 40 mins
- Puree in blender
- return to pot and simmer for 5 mins
- Serve with Crusty Whole wheat/ Grain bread
