Black Bean & Corn Salad

Makes 10 servings

Dad's salad

Ingredients
1/2 red onion
12 oz. can black beans
16 oz. frozen corn
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
3 cloves of garlic
1 tsp. black pepper
1 tbsp. lime juice
1/4 cup red wine vinegar
1/4 cup parmesan cheese
1/4 cup cilantro
3 jalapeno peppers
Directions
  1. Drain beans and corn. Place in separate bowl.

  2. Chop all peppers, onion, cilantro.

  3. Mince garlic.

  4. Pour peppers, onion, cilantro, and garlic into large bowl.

  5. Pour lime juice and vinegar over mixture.

  6. Add corn and beans.

  7. Spring with salt, pepper, and cheese.

  8. Mix lightly.

  9. Chill for an hour before eating.
