Ingredients
| 1/2 |
red onion |
| 12 |
oz. can black beans |
| 16 |
oz. frozen corn |
| 1 |
red bell pepper |
| 1 |
orange bell pepper |
| 1 |
yellow bell pepper |
| 3 |
cloves of garlic |
| 1 |
tsp. black pepper |
| 1 |
tbsp. lime juice |
| 1/4 |
cup red wine vinegar |
| 1/4 |
cup parmesan cheese |
| 1/4 |
cup cilantro |
| 3 |
jalapeno peppers |
Directions
- Drain beans and corn. Place in separate bowl.
- Chop all peppers, onion, cilantro.
- Mince garlic.
- Pour peppers, onion, cilantro, and garlic into large bowl.
- Pour lime juice and vinegar over mixture.
- Add corn and beans.
- Spring with salt, pepper, and cheese.
- Mix lightly.
- Chill for an hour before eating.
