A great blueberry dessert bread, much in the vein of banana bread.
| 2 | cups flour |
| 2 | cups blueberries |
| 3/4 | cup sugar |
| 2 1/2 | tsp baking powder |
| 3/4 | tsp salt |
| 1/4 | cup shortening |
| 3/4 | cup milk |
| 1 | egg |
| 1/3 | cup brown sugar |
| 1/4 | cup flour |
| 1/4 | cup pecan |
| 1/2 | tsp cinnamon |
| 3 | tbsp butter, firm |
- Heat oven to 375 degrees. Grease round layer pan, 9X1-1/2 inches or square pan, 8x8x2 or 9x9x2 inches.
- Blend all but final 5 ingredients; beat vigorously for 30 seconds. Spread into pan.
- Topping (final 5 ingredients) Mix brown sugar (packed), pecans, flour, cinnamon and butter until crumbly. Sprinkle topping over butter. Bake 45 to 50 minutes or until wooden pick inserted in center comes out cleanly. Serve Warm.
