Cheese Blintzes Recipe

Makes 6 servings


Cheese filled crepes with Raspberry sauce

Ingredients
3 eggs
1/2 cup flour
1 cup skim milk
1 cup raspberries
1/2 cup sugar
2 cups lowfat cottage cheese
7 ounces neufchatel cream cheese
2 tbsp butter
Directions
  1. Mix melted butter, eggs, flour and milk. Let sit for 1 hour. Make crepes in non-stick pan.

  2. Mix cream cheese and cottage cheese in food processor until smooth. Add 1/4 cup sugar and 1 tsp vanilla.

  3. Heat raspberries and 1/4 cup sugar until sugar dissolves.

  4. Wrap cheese mixture into crepe and top with raspberries. Best served warm.
