Cheese filled crepes with Raspberry sauce
| 3 | eggs |
| 1/2 | cup flour |
| 1 | cup skim milk |
| 1 | cup raspberries |
| 1/2 | cup sugar |
| 2 | cups lowfat cottage cheese |
| 7 | ounces neufchatel cream cheese |
| 2 | tbsp butter |
- Mix melted butter, eggs, flour and milk. Let sit for 1 hour. Make crepes in non-stick pan.
- Mix cream cheese and cottage cheese in food processor until smooth. Add 1/4 cup sugar and 1 tsp vanilla.
- Heat raspberries and 1/4 cup sugar until sugar dissolves.
- Wrap cheese mixture into crepe and top with raspberries. Best served warm.
