Chicken and Rice Soup Recipe

Being on a diet can be so frustrating when you are trying to manage the nutritional needs of others in your household. For those of you going through it, Please try my recipe. Modify as you'd like but there really isn't a need to. :)

Ingredients
14 oz chicken broth
10 oz frozen peas
10 oz frozen carrots
3 tbsp of mustard
1 red onion
1 cup of celery
4 tbsp of black pepper
2 tsp of red pepper flakes
2 tbsp salt
1 lb of chicken breast
1 tbsp of olive oil
10 cups of water
1 cup brown rice
2 cups of spinach
Directions
  1. Throw the water, black pepper and broth in a pot.

  2. chop the celery and onion, throw it in the pot.

  3. throw in the carrots, peas, and spinach ( add other veggies if you'd like.

  4. Mix together in pot.

  5. throw in the red pepper flakes and salt as well as the mustard.

  6. Cook until boiling

  7. Add chopped up chicken breast.

  8. Add the olive oil and rice.

  9. Cook for 45 min or until rice is soft. Stir occassionally ( I prefer to cook the rice before hand and then throw it in the mix.)
