Carrot-Apple Muffins Recipe

very low gi muffins

Ingredients
2 eggs
1/4 cup oil
1/4 cup sugar
2 cups bran
2 cups skim milk
2 1/2 cups wholewheat flour
2 1/2 tsp baking soda
1 (175g) carrot
1 (250g) apple
1 (35g) banana
1/5 cup (40g) sunflower seeds
1 (30g) dried dates
2 tbsp cinnamon
Directions
  1. grate apple and carrot

  2. mix together all ingredients

  3. spoon into small muffin pans

  4. bake at 200 degrees celsius for 40 minutes
