carrot muffins

Makes 52 servings

Very low GI muffins.

Ingredients
4 eggs
1/2 cup oil
1/2 cup sugar
4 cups bran
4 cups skim milk
5 cups brown flour
5 tsp baking soda
3 (100g) carrots, grated
4 (120g) apples, grated
1 (100g) almonds
1 (100g) dried dates, chopped
1 tsp salt
2 tbsp cinnamon
1 tsp nutmeg
Directions
  1. Beat eggs, oil and sugar.

  2. Add baking soda, salt, cinnamon and nutmeg.

  3. Add bran and milk.

  4. Add all other ingredients.

  5. Spoon into small muffin pans (if they're silicone, you don't need to grease them).

  6. Bake at 200 degrees celsius for 40 minutes.
