Very low GI muffins.

Ingredients
| 4 |
eggs |
| 1/2 |
cup oil |
| 1/2 |
cup sugar |
| 4 |
cups bran |
| 4 |
cups skim milk |
| 5 |
cups brown flour |
| 5 |
tsp baking soda |
| 3 |
(100g) carrots, grated |
| 4 |
(120g) apples, grated |
| 1 |
(100g) almonds |
| 1 |
(100g) dried dates, chopped |
| 1 |
tsp salt |
| 2 |
tbsp cinnamon |
| 1 |
tsp nutmeg |
Directions
- Beat eggs, oil and sugar.
- Add baking soda, salt, cinnamon and nutmeg.
- Add bran and milk.
- Add all other ingredients.
- Spoon into small muffin pans (if they're silicone, you don't need to grease them).
- Bake at 200 degrees celsius for 40 minutes.
