Vegansweetie's Fat-free Brownies

Vegan!

Ingredients
1/2 tbsp ground flax seed plus 1 1/2 tbsp water 103349
170 g (3/4 cup) lite silken firm tofu (I recommend Mori-Nu brand) 16165
1/2 cup water
1/2 cup pure maple syrup (not the sugary fake stuff)* 112336
1/2 cup unsweetened cocoa powder 19165
2 teaspoons vanilla extract 2050
1/2 cup whole wheat flour
3/4 cup white flour
1 cup white sugar
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
Directions
  1. Preheat the oven to 350 degree. Spray a 9" x 9" baking pan (or 8" x 8", or whatever you have) with oil and set aside.

  2. Crumble the tofu into your blender along with the water, syrup, cocoa, vanilla, and flaxseed/water combo and blend until totally mixed. If using hand-held beaters, combine the ingredients in a bowl and blend until totally mixed. It should be thick and chocolate-y. If you have a cute little Magic Bullet blender, ALL of this stuff will fit into the large sized blender cup.

  3. In a separate bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Pour the wet ingredients into the combined dry ingredients and mix thoroughly.

  4. Pour the batter into the greased baking dish and bake for 30 minutes. Let cool for 5 minutes before cutting into 16 pieces. Dust with powdered sugar, if you want to be fancy, and serve.
