Ingredients

g (3/4 cup) lite silken firm tofu (I recommend Mori-Nu brand) 16165 |

| 1/2 |
cup pure maple syrup (not the sugary fake stuff)* 112336 |

cup whole wheat flour |

cup white flour |
| 1 |
cup white sugar |

| 1/4 |
teaspoon ground cinnamon |

teaspoon salt |
Directions
- Preheat the oven to 350 degree. Spray a 9" x 9" baking pan (or 8" x 8", or whatever you have) with oil and set aside.
- Crumble the tofu into your blender along with the water, syrup, cocoa, vanilla, and flaxseed/water combo and blend until totally mixed. If using hand-held beaters, combine the ingredients in a bowl and blend until totally mixed. It should be thick and chocolate-y. If you have a cute little Magic Bullet blender, ALL of this stuff will fit into the large sized blender cup.
- In a separate bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Pour the wet ingredients into the combined dry ingredients and mix thoroughly.
- Pour the batter into the greased baking dish and bake for 30 minutes. Let cool for 5 minutes before cutting into 16 pieces. Dust with powdered sugar, if you want to be fancy, and serve.
