Quick Tomato Bean Soup Recipe

I usually have the ingredients for this laying around so it is quick and filling lunch.

Ingredients
1 garlic clove, chopped
3 tbsp chopped onion
1 tbsp oregano, Ground
1 tsp extra virgin olive oil
400 g Canned Whole Peeled Tomatoes
3 tbsp Tomato Paste
1 cup Canned Dark Red Kidney Beans, drained
1 tsp cumin
1/2 tsp ground cayenne pepper
1/2 tsp chicken bouillon, Dehydrated, Dry
Directions
  1. Heat oil in pan on medium high heat and put in onions and sautee for about 1 minute.

  2. Add garlic clove and oregano and sautee for another minute.

  3. Add tomatoes and turn down heat to medium-low heat and crush tomatoes.

  4. Add the remaining ingredients and stir.

  5. Let simmer for at least 15 minutes until the spice are absorbed in the sauce.
