High Fiber Shepherd's Pie Recipe

Makes 8 servings


High fiber, high protein dish that my kids love.

Ingredients
2 lbs lean ground beef ,fried
1 cup garbanzo beans, pureed
50 g oat bran
1/2 cup water
1/2 cup corn
1/2 cup beans
1/2 cup peas
3 cups potatoes, mashed
2 tbsp margarine
1 tsp garlic
1 tsp chili powder
1 tsp dill
Directions
  1. Fry beef until cooked, add oat bran and water and mix well. Add chickpea puree. cook on lo-med for 5-10 minutes. Place in 9x13 pan.

  2. Steam veggies. Put ontop of beef mixture.

  3. Top with mashed potatoes and season top of potatoes with garlic, chili powder and dill, dab with margarine.

  4. bake at 350 for 20 mins
