Ingredients
| 2 |
cups whole wheat flour |
| 1/3 |
cup brown sugar, packed |
| 1 |
teaspoon baking soda |
| 1 |
teaspoon baking powder |
| 2 |
teaspoons ground cinnamon |
| 1 |
cup milk, nonfat, fluid |
| 1/4 |
cup applesauce |
| 1 |
teaspoon vanilla extract |
| 1/2 |
cup raisins |
Directions
- Combine the flour, brown sugar, baking soda, baking powder and cinnamon; stir to mix well. Add the milk, applesauce and vanilla extract; stir just until the dry ingredients are moistened. Fold in the raisins.
- Coat an 8" x 4" loaf pan with non-stick cooking spray. Spread the mixture evenly in the pan. Bake at 350 degrees for about 45 minutes, or until a wooden pick inserted in the center of the loaf comes out clean.
- Remove pan from oven and let sit for 10 minutes. Invert the loaf onto a wire rack to remove bread from pan. Turn right side up and cool before slicing.
