| 4 | onions |
| 8 | garlic cloves |
| 4 | carrots |
| 300 | ml dry white wine |
| 300 | ml stock |
- heat oven to 120C
- brown leg of lamb on all sides until deep brown for 10 minutes
- throw in chopped vegetables, followed by the wine and the stock
- bring to the boil and put in the oven, bake for 7 hours, turning twice
- transfer meat and veg to a serving dish adn reduce the sauce, adding a little armagnac if you wish
