This recipe "doctors" a can of black beans and cooks the liquids down to make it saucy. A bit of Vigo or Goya Sazon seasoning, to name a few, is an exeptional addition. A serving consists of a cup of rice with a 1/2 cup of the finished beans. This makes a heaty portion. Great with grilled chicken.
| 2 | tbsp olive oil |
| 1/2 | c diced onions |
| 1/4 | c diced green peppers |
| 2 | cloves garlic, minced |
| 432 | g Black Beans 1 can undrained |
| 1 | tsp oregano |
| 3/4 | c water |
| 2 | c cooked white rice |
- Heat saucepan over medium-high and add oil.
- When heated, add onions, peppers and garlic.
- Cook several minutes, until veggies are soft and add undrained beans, water, and Sazon(optional). Bring to a boil.
- Reduce and simmer for about 25 minutes until slightly thickened.
- Serve over the rice cooked per package directions.
