Black Beans with Cooked White Rice Recipe

This recipe "doctors" a can of black beans and cooks the liquids down to make it saucy. A bit of Vigo or Goya Sazon seasoning, to name a few, is an exeptional addition. A serving consists of a cup of rice with a 1/2 cup of the finished beans. This makes a heaty portion. Great with grilled chicken.

Ingredients
2 tbsp olive oil
1/2 c diced onions
1/4 c diced green peppers
2 cloves garlic, minced
432 g Black Beans 1 can undrained
1 tsp oregano
3/4 c water
2 c cooked white rice
Directions
  1. Heat saucepan over medium-high and add oil.

  2. When heated, add onions, peppers and garlic.

  3. Cook several minutes, until veggies are soft and add undrained beans, water, and Sazon(optional). Bring to a boil.

  4. Reduce and simmer for about 25 minutes until slightly thickened.

  5. Serve over the rice cooked per package directions.
