Local Banana Oat Muffins Recipe

Makes 12 servings


low sugar, low fat, uses oat flour

Ingredients
1 1/4 cup old fashioned oats, ground to 1 cup flour
1 tbs baking powder
1/2 tsp baking soda
1/8 tsp salt
3 bananas, mashed
1/4 cup splenda
1/4 cup unsweetened applesauce
1/4 cup egg beaters
1/2 tsp vanilla extract
Directions
Mix dry ingredients together, mix all other ingredients, then combine together until just moist. Divide into 12 cup muffin tin . Bake 350 degrees for 15-20 minutes (I did 17 min).Muffins will be on the smaller side but very moist and delicious.
