With only 108 calories per muffin and 1 gram of fat, these muffins are a great way to satisfy a chocolate craving. Because they don't have any oil in them, their texture is a little more sponge-like than regular muffins, but they still taste fantastic.
| 1 1/4 | cups all purpose flour |
| 1/2 | cup sugar |
| 1/3 | cup baking cocoa |
| 1 | tsp baking powder |
| 1 | tsp baking soda |
| 1 | cup unsweetened applesauce |
| 1/2 | cup skim milk |
| 1/2 | cup egg beaters |
| 1 | teaspoon vanilla extract |
- In a bowl, combine flour, sugar, cocoa, baking powder, and baking soda. (Recommend sifting the cocoa, but it's not essential.)
- In another bowl, whisk the applesauce, milk, egg beaters, and vanilla until smooth. Stir into dry ingredients just until moistened.
- Line muffin tin with muffin cups. Coat muffin cups with cooking spray; fill three-fourths full with batter.
- Bake at 400 degrees F for 20 - 25 minutes or until muffins test done.
- Cool for 10 minutes, remove from pan to wire rack.
