Low-Fat Chocolate Muffins Recipe

With only 108 calories per muffin and 1 gram of fat, these muffins are a great way to satisfy a chocolate craving. Because they don't have any oil in them, their texture is a little more sponge-like than regular muffins, but they still taste fantastic.

Ingredients
1 1/4 cups all purpose flour
1/2 cup sugar
1/3 cup baking cocoa
1 tsp baking powder
1 tsp baking soda
1 cup unsweetened applesauce
1/2 cup skim milk
1/2 cup egg beaters
1 teaspoon vanilla extract
Directions
  1. In a bowl, combine flour, sugar, cocoa, baking powder, and baking soda. (Recommend sifting the cocoa, but it's not essential.)

  2. In another bowl, whisk the applesauce, milk, egg beaters, and vanilla until smooth. Stir into dry ingredients just until moistened.

  3. Line muffin tin with muffin cups. Coat muffin cups with cooking spray; fill three-fourths full with batter.

  4. Bake at 400 degrees F for 20 - 25 minutes or until muffins test done.

  5. Cool for 10 minutes, remove from pan to wire rack.

  6. *Optional: After pouring batter into muffin cups, top each muffin with a few slivered almonds before baking. (Nutritional info for this recipe does NOT include the almonds.)
