| 1 1/4 | cups whole wheat flour |
| 2 | tbsp sugar |
| 2 | tsp baking powder |
| 1 | egg, beaten |
| 1 | cup skim milk |
| 1 | tbsp cooking oil |
| 1/2 | tsp salt |
- Stir together flour, sugar, baking powder, and 1/2 tsp salt.
- Combine egg, milk, and oil. Add all at once to flour mixture, stirring until blended but still slightly lumpy.
- Pour 1/4 cup of batter onto a hot, lightly-greased griddle or a heavy skillet for each pancake.
- Cook until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges.
