Cold potatoe and bean salad with tomates and french vinaigrette
| 2 | medium potatoes, boiled |
| 3 | small tomatoes |
| 1 | cup string beans, boiled |
| 1/2 | cup radicchio, raw |
| 2 | tblsp Dijon mustard |
| 3 | tblsp apple cider vinegar |
| 3 | tblsp olive oil |
| 1/16 | tsp salt |
- Boil the potatoes and dice
- Boil the beans and cup in halves
- Dice the tomatoes and radicchio
- Make the vinaigrette
- combine vinegar, salt and mustard
- then add the oil
- Mix and serve
