| 1 | medium onion, chopped |
| 3 | cloves garlic, chopped |
| 1 | lb boneless pork loin, cut into 1.5" pieces |
| 1/4 | cup cornmeal |
| 1 | tsp ground cumin |
| 1/2 | tsp oregano |
| 1/4 | tsp salt |
| 15 | ounces chili beans with sauce |
| 14 1/2 | ounces diced tomatoes with chilis |
| 1 | cup chicken broth |
| 2 | cups frozen whole kernel corn, thawed |
- Place onion and garlic in 1.5-6 qt slow cooker. Top with pork.
- Mix cornmeal, cumin, and salt; sprinkle over pork and mix well.
- Add beans, tomatoes, and broth and mix well.
- Cover and cook on low heat setting 8-10 hours (4-5 hours on high setting) or until pork is tender. Stir in corn and oregano
- Cover and cook on low heat setting about 30 more minues or until corn is tender.
