Southwestern Pork Stew Recipe

Makes 6 servings


Serve with HG cheesy good cornbread muffins

Ingredients
1 medium onion, chopped
3 cloves garlic, chopped
1 lb boneless pork loin, cut into 1.5" pieces
1/4 cup cornmeal
1 tsp ground cumin
1/2 tsp oregano
1/4 tsp salt
15 ounces chili beans with sauce
14 1/2 ounces diced tomatoes with chilis
1 cup chicken broth
2 cups frozen whole kernel corn, thawed
Directions
  1. Place onion and garlic in 1.5-6 qt slow cooker. Top with pork.

  2. Mix cornmeal, cumin, and salt; sprinkle over pork and mix well.

  3. Add beans, tomatoes, and broth and mix well.

  4. Cover and cook on low heat setting 8-10 hours (4-5 hours on high setting) or until pork is tender. Stir in corn and oregano

  5. Cover and cook on low heat setting about 30 more minues or until corn is tender.
