The is baked egg dish featuring salsa and cheddar cheese. The mixture can be prepared ahead of guests and baked for nice brunch. Serve with toast.
| 4 | large eggs |
| 1/2 | cup green peppers, chopped |
| 1/2 | cup onions, chopped |
| 1/2 | cup mushrooms, chopped |
| 4 | tbsp salsa |
| 1/2 | cup cheddar cheese, shredded |
| 1 | tbsp olive oil |
| 2 | tbsp soy milk |
- Fry veggies in olive oil, then add the salsa and fry until reduced.
- Add that mixture to a pie dish and sprinkle cheese on top.
- In a bowl scramble the eggs with the soy milk and add to the pie dish with veggies, salsa and cheese.
- Make sure the eggs and mixture are evenly spread.
- Bake 375 for 20- 30 minutes or untila knife is clear after being pushed in the center.
