In my forums I'm looking for a granola bar that works, good amount of calories, and very nutritious for you. This granola bar may not hit all the spots but this is a step closer to where I want to be. Still working it all out but yeah if you're a decent cook and know how you could make this recipe better then tell me and I would be happy for the critique. Enjoy!
| 1 | cup granola |
| 1/2 | cup rolled oats |
| 1/2 | cup corn flakes |
| 1/3 | package (3.6 oz/ or 1/3 cup) dried fruit |
| 1/3 | cup chopped nuts |
| 1 1/2 | servings (3 tbs) marshmallow fluff |
| 1 | tsp butter, salted |
| 1/4 | cup lite maple syrup |
| 1/4 | cup honey |
| 1/4 | cup Silk Soymilk Very Vanilla |
- Mix all dry ingredients in a huge bowl.
- In a small sauce pan on medium heat pour the vanilla soy milk first and let that heat for like a minute. Add the marshmallow fluff, maple syrup, honey and 1 tsp butter. The reason I put the butter was because when the marshmallow fluff melts it doesn't melt completely so I thought that I needed butter but maybe I was wrong on that part since that didn't make a difference. I could have put some apple sauce instead or something.
- Anyway, with a flat wooden spoon (much easier to stir with instead of a metal spoon/ fork) constantly stir the liquid until it thickens nicely. Once the mixture starts to bubble lower the heat and continue stirring for around 3-5 more minutes.
- With your dry mixture right next to you quickly pour the liquid and stir gently. Do not over stir, mix until lightly coated. If you think the mixture needs a little bit more liquid squeeze some maple syrup and honey onto the mixture.
- In a greased 8" by 8" pan (or anything bigger) turn over the mixture onto the pan. If you have wax paper you could use that too instead of oil/ butter. Take wax paper and cover the pan. Press down firmly so the mixture all sticks together. Leaving the wax paper let the mixture freeze for at least 4 hours until cutting into bars.
- Keep well for about a week. If you want remake the Nature Valley Sweet and Salty bar you could possibly use a little bit of milk, white chocolate, and some almond butter and dip the bars and let them dry on a sheet.
