cups milk, skim |

large eggs |

tbls parmesan cheese, grated |
| 1/4 |
cup cheddar cheese, shredded |

grams spinach |
| 1 |
medium onion |
| 1 |
pie crust |
Directions
- preheat oven 375
- cook spinach and season to taste, drain and squeeze as much water as you can out of the cooked spinach.cut it up.
- Carmelize the onion
- combine eggs and milk thoughly
- add all remaining ingred.
- pour into crust.
- bake 375 35-45 mins
- jiggle it to test doneness,
- should be like thick pudding,
- feels spongey in center not wet.
