Rd's Peperami Salad Recipe

Ideal for packed lunches

Ingredients
6 oz brown rice
25 g salami (1 stick peperami)
120 g sweetcorn
3 stalks celery, chopped
1 tbsp soy sauce
2 tbsp shallots, diced
1 red pepper, diced
4 oz green beans, chopped
Directions
  1. Cook brown rice according to instrcuions on packet and allow to cool.

  2. Mix the cold rice with the other ingredients and serve
