Vegetarian Chili Recipe

Makes 4 servings

Ingredients
2 tsp canola oil
1 large white onion, chopped
3 garlic cloves, minced
3 T green salsa
1 jalapeno pepper, cored seeded and minced
1 red bell pepper, cored seeded and chopped
1/4 c. minced fresh cilantro
1 T. ground cumin
1 1/2 T. chili powder
2 tsp. dried oregano
2 T. balsamic vinegar
2 c. canned tomatoes
2 c. kidney beans, cooked
1 c. black beans, cooked
Directions
  1. heat oil over med-high heat. add onion, garlic, jalapeno, red bell pepper, cilantro, oregano, cumin and chili powder

  2. reduce heat to med. saute until vegs soft (7 min)

  3. add vinegar and stir until almost evaporated (3 min)

  4. add tomatoes and green salsa. stir well. simmer until sauce thickens (7 min)

  5. stir in beans, cover, simmer (20 min)

  6. turn off heat and let sit an hour. reheat and serve

  7. top with fat free sour cream or yogurt, cheddar cheese, fresh cilantro, chopped red onion, chopped green onions.. whatever...
