Homemade Leek and Celeriac Soup,
| 2 | leeks |
| 1 | medium potato |
| 1 | carrot |
| 250 | grams celeriac |
| 1 1/2 | litres stock |
| 1 | salt |
| 1 | pepper |
| 1 | teaspoon olive oil |
- Heat Olive Oil in pan
- Add leeks and cook until soft
- Add cubed potato, carrot and celeriac and coat in leeks
- Add stock, bay leef, salt and pepper
- Being to the boil, then simmer until cooked (around 1.5 hours)
- Blend and serve. Add seasoning to taste
