Leek and Celeriac Soup Recipe

Homemade Leek and Celeriac Soup,

Ingredients
2 leeks
1 medium potato
1 carrot
250 grams celeriac
1 1/2 litres stock
1 salt
1 pepper
1 teaspoon olive oil
Directions
  1. Heat Olive Oil in pan

  2. Add leeks and cook until soft

  3. Add cubed potato, carrot and celeriac and coat in leeks

  4. Add stock, bay leef, salt and pepper

  5. Being to the boil, then simmer until cooked (around 1.5 hours)

  6. Blend and serve. Add seasoning to taste
