Peanut Butter Fudge (Old-Fashioned) Recipe

Makes 8 servings


Delicious! And even somewhat healthy if you use Omega peanut butter.

Ingredients
2 c. sugar
3/4 c. evaporated skim milk OR fat-free half and half
1/2 c. peanut butter
1 tsp. vanilla extract
Directions
  1. Boil together milk and sugar in a saucepan over medium-low heat.

  2. Use candy thermometer to determine soft-ball stage, remove pan from heat when mixture reaches (238*F).

  3. Quickly stir in peanut butter & vanilla; beat until mixture loses its gloss.

  4. Pour into buttered 9x9 pie plate or comparable size pan. Cool completely, then cut into squares. Store tightly covered in a cool place.
