| 2 | c. sugar |
| 3/4 | c. evaporated skim milk OR fat-free half and half |
| 1/2 | c. peanut butter |
| 1 | tsp. vanilla extract |
- Boil together milk and sugar in a saucepan over medium-low heat.
- Use candy thermometer to determine soft-ball stage, remove pan from heat when mixture reaches (238*F).
- Quickly stir in peanut butter & vanilla; beat until mixture loses its gloss.
- Pour into buttered 9x9 pie plate or comparable size pan. Cool completely, then cut into squares. Store tightly covered in a cool place.
