Individual chocolate tarts. Can be made w/any fruit jam, but I like orange.
| 1 | cup graham-cracker crumbs |
| 3 | tbsp butter, melted |
| 1/6 | cup marmalade |
| 12 | tsp marmalade |
| 3/8 | cup whipping cream |
| 3 | oz. semisweet chocolate |
| 1/4 | tsp ground cloves |
- Crust:
- Preheat oven to 350 °F.
- Line muffin pan with 12 liners.
- Combine graham-cracker crumbs, butter, and 1/6 cup marmalade.
- Press crumb mixture into the bottom of each muffin liner, using ~1 tbsp filling.
- Bake for 5-7 min, until just lightly browned.
- Thinly spread ~1 tsp marmalade over each tartlet crust.
- Set aside.
- Filling:
- Cream in a small saucepan or double boiler until just simmering.
- Stir in the chocolate, cloves, and (if desired) 1 oz orange liqueur.
- Let mixture cool lightly.
- Spoon into muffin cups, dividing the chocolate mixture evenly.
- If desired, top each tartlet with fruit.
- Chill ~2 hours (or overnight) before serving
