A delicious, flavorful and filling chicken and coconut milk thai soup.

Ingredients

ounces chicken broth |
| 5 |
ounces lite coconut milk |
| 2 |
tsp chili paste |
| 1 |
tbsp lemon grass |
| 1 |
tbsp galanga root |
| 1 |
tbsp thai fish sauce |
| 1 |
tbsp lime juice |
| 1 |
tbsp brown sugar |
| 3 |
oz chicken breast |
| 1/2 |
cup sliced mushrooms |
| 1/3 |
cup sliced onion |
| 1/4 |
cup cilantro, chopped |
Directions
- Put chicken broth, coconut milk, chili paste, bruised (to release flavor) lemon grass, galanga root, fist sauce, lime juice and brown sugar into a pot, bring to a boil and reduce heat to a simmer.
- Add chicken, mushrooms and onion and simmer for 10-15 minutes.
- Serve with cilantro as a garnish if you choose.
