Yummy bean burgers with a little spiciness
| 45 | oz black beans, drained and rinsed, divided |
| 2 | large eggs |
| 2 | cups toasted fresh bread crumbs |
| 1 | cup red bell pepper, chopped |
| 1/2 | cup green onions, chopped |
| 1/2 | cup cilantro, chopped |
| 2 | garlic cloves, minced |
| 2 | tsp chili powder |
| 1 | tsp ground cumin |
| 1 | tsp cayenne pepper |
| 1 | tsp salt |
| 1/2 | tsp onion powder |
| 1/2 | tsp ground black pepper |
- Puree 2 cups black beans with eggs in processor until smooth. Transfer to a large bowl. Stir in remaining beans, 1 1/4 cups breadcrumbs and rest of ingredients.
- Shape mixture into ten 1/2-inch-thick patties, using about 1/2 cup mixture for each. Cover and chill for at least 30 minutes.
- Coat cakes on both sides with remaining bread crumbs. Spray two large skillets with oil and heat over medium heat. Add five cakes to each skillet and cook about 3 minutes per side, until golden.
