Black Bean Burgers Recipe

Yummy bean burgers with a little spiciness

Ingredients
45 oz black beans, drained and rinsed, divided
2 large eggs
2 cups toasted fresh bread crumbs
1 cup red bell pepper, chopped
1/2 cup green onions, chopped
1/2 cup cilantro, chopped
2 garlic cloves, minced
2 tsp chili powder
1 tsp ground cumin
1 tsp cayenne pepper
1 tsp salt
1/2 tsp onion powder
1/2 tsp ground black pepper
Directions
  1. Puree 2 cups black beans with eggs in processor until smooth. Transfer to a large bowl. Stir in remaining beans, 1 1/4 cups breadcrumbs and rest of ingredients.

  2. Shape mixture into ten 1/2-inch-thick patties, using about 1/2 cup mixture for each. Cover and chill for at least 30 minutes.

  3. Coat cakes on both sides with remaining bread crumbs. Spray two large skillets with oil and heat over medium heat. Add five cakes to each skillet and cook about 3 minutes per side, until golden.
