Individual Cheese and Tomato Quiche

Makes 1 serving

From the American Diabetes Association. You can add your own favorite quiche ingredients to this basic recipe. egg substitute, non-fat powdered milk, black pepper, cheddar cheese, sun-dried tomatoes, basil, paprika cvt

Ingredients
1/2 cup egg substitute
1 tbsp (nonfat) dry milk (1092)
1 tsp black pepper
1/2 cup low-fat cheddar cheese, grated (1168)
1/4 cup sun-dried tomatoes, chopped (11955)
1 tsp dried basil
1 dash paprika
Directions
  1. Preheat the oven to 350 degrees F. Spray a 6-inch pie pan with nonstick cooking spray or spray 3 muffin compartments of a muffin tin (add water to the unused cups before placing in the oven).

  2. Combine all the ingredients in a small bowl. The batter will be chunky. Pour the batter into the prepared pan and sprinkle with additional paprika if desired.

  3. Bake for 30 minutes or until a knife inserted into the center draws out clean. Let the quiche stand for 5 minutes before serving.
