Chicken Curry Recipe

Makes 3 servings


Pete's favorite- birthday dinner

Ingredients
3 T. butter
1 t. curry powder
3 T. flour
3/4 t. salt
1/2 t. lemon juice
1/4 c. minced onion
3/4 t. sugar
1/8 t. ground ginger
1 c. chicken broth
1 c. milk
2 c. cooked chicken, chopped
Directions
Melt butter in sauce pan. Saute onion and curry powder in butter. Blend in flour and seasonings. Cook over low heat until mixture is smooth and bubbly. Stir in chicken broth and milk. Bring to boil, stirring constantly. Boil one minute. Add chicken and lemon juice. Heat through. Serve over rice.
