Low-Fat Pumpkin Cookies

Easy cookies. Received the receipe haven't tried making them yet...

Ingredients
1/2 cup organic applesauce
1/2 tsp vanilla extract
1/4 cup brown sugar or 3 tbsp Barley Malt Syrup, Organic
1/4 cup tofu, soft
1 1/2 cups pumpkin, puree
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
1/8 tsp ginger
1 cup rolled oats
2 tsp baking powder
1 1/2 cup buckwheat flour
Directions
  1. Preheat oven to 350 degrees.

  2. In a mixing bowl, blend together first five ingredients.

  3. Mix in spices, oats, and baking soda, then fold in flour, raisins or dates (optional)

  4. Drop by tablespoons onto a nonstick cookie sheet and bake for 10 minutes. Then, remove cookie sheet and use the bottom of a glass to press the cookies down. Bake for another 2 to 3 minutes. Yields 2-1/2 dozen cookies.
