Ingredients

cup organic applesauce |
| 1/2 |
tsp vanilla extract |
| 1/4 |
cup brown sugar or 3 tbsp Barley Malt Syrup, Organic |
| 1/4 |
cup tofu, soft |
| 1 1/2 |
cups pumpkin, puree |
| 1 |
tsp cinnamon |
| 1/2 |
tsp nutmeg |
| 1/8 |
tsp cloves |
| 1/8 |
tsp ginger |
| 1 |
cup rolled oats |
| 2 |
tsp baking powder |
| 1 1/2 |
cup buckwheat flour |
Directions
- Preheat oven to 350 degrees.
- In a mixing bowl, blend together first five ingredients.
- Mix in spices, oats, and baking soda, then fold in flour, raisins or dates (optional)
- Drop by tablespoons onto a nonstick cookie sheet and bake for 10 minutes. Then, remove cookie sheet and use the bottom of a glass to press the cookies down. Bake for another 2 to 3 minutes. Yields 2-1/2 dozen cookies.
