Kyras Healthy Chinese Pork Soup Recipe

healthy low calorie easy to make soup - even my mother in law ate it = which surprised the hell out of me considering she thinks vegetables the devils spawn and should be boiled to mush

Ingredients
3 cups pak choi
1/4 pound cooked pork
1 teaspoon chopped garlic
2 teaspoons fresh ginger
2 teaspoons olive oil
10 cups chicken stock
1 large courgette
1 large onion
1/2 cup mushrooms
Directions
soften chopped onion, garlic and ginger in hot olive oil, when soft add hot chicken stock along with all other ingredients already chopped into 2cm cubes cook briefly at the boil for around 3mins and serve
