A dish to take with you to tailgate parties. Filling, yet (relativly) low in calories.
| 4 1/2 | cups of Flour |
| 2 | tbsp of Honey |
| 1 | tsp of Salt |
| 1 1/4 | cups of Water |
| 1 1/2 | lbs of Ground Turkey |
| 1 | cup of Tomato Sauce |
| 20 | slices of Pepperoni |
| 1 | cup of Mozzarella Cheese |
- Prepare the dough. - Combine 1.25 cups of water, 1 tsp of salt, 2 tbsp of honey in a mixing bowl.
- Add 1 cup of flour and combine.
- Add rest of flour and mix with dough hook until dough no longer sticks to the sides of the bowl. If dough sticks to the side of the bowl add more water 1 tbsp at a time, if dough is runny or like batter add more flour 1 tbsp at a time.
- Remove dough from bowl and knead.
- Place dough into bowl and cover with damp towel for 45 minutes.
- Reknead dough and place back into bowl under the towel for another 45 minutes.
- Roll dough out, as flat at possible without tearing. Take a glass or mug that is about 3" diameter. Cut out as many Mini Pizza's as possible (the amounts listed above makes about 4-5 10" pizza's, so you should be able to get 20?)
- Now for the toppings, light is good here. Preheat oven as hot as possible, place backing stone in the oven to warm up (if you dont have a stone just pre-heat to 375º)
- Brown 1.5lbs of ground turkey.
- Take a tablespoon of sauce and put that on each pizza.
- Sprinkle low-fat mozzarella cheese onto each pizza.
- Place even amounts of turkey onto each pizza.
- Top each pizza with 1 pepperoni.
- Place pizzas onto baking stone then place into oven and drop temperature to 375º. (If you don't have a stone a cookie tray will do the job.)
- Allow to cook for 5-7minutes (it wont take long to cook that bit of dough through.
- Enjoy!
