3 Beans Ham Soup Recipe

Makes 10 servings


white, black and lentil beans w bacon soup

Ingredients
1 large onion
6 carrots
4 cups organic vegetable broth
8 oz dry white beans
8 oz dry lentil
4 oz dry black beans
4 oz bacon
4 oz celery
4 cups water
Directions
  1. soak beans for 3 hours in 8 qts water , then drain

  2. saute bacon

  3. add chopped onions celery and carrots

  4. cook down vegetables then add broth, water, and beans and bring to boil

  5. add spices to taste, pepper, cayane pepper, salt ect

  6. then simmer on low for 2 hours.

  7. serve with french bread that has been toasted in the oven and lightly brushed with olive oil , and a sprinkle of salt and pepper
