white, black and lentil beans w bacon soup
| 1 | large onion |
| 6 | carrots |
| 4 | cups organic vegetable broth |
| 8 | oz dry white beans |
| 8 | oz dry lentil |
| 4 | oz dry black beans |
| 4 | oz bacon |
| 4 | oz celery |
| 4 | cups water |
- soak beans for 3 hours in 8 qts water , then drain
- saute bacon
- add chopped onions celery and carrots
- cook down vegetables then add broth, water, and beans and bring to boil
- add spices to taste, pepper, cayane pepper, salt ect
- then simmer on low for 2 hours.
- serve with french bread that has been toasted in the oven and lightly brushed with olive oil , and a sprinkle of salt and pepper
