My sisters receipe
| 1 | onion, chopped |
| 2 | cloves garlic, crushed and minced |
| 1 | T dried oregano |
| 6 | tomatoes, peeled seeded and chopped |
| 2 | c cooked chickpeas, rinsed and drained |
| 3/4 | c feta cheese |
- Heat nonstick skillet over ned-high heat. When hot, add the onion, garlic and oregano. Reduce the heat to med-low and saute, stirring often, until the onion is soft, about 7 min.
- Add the tomatoes and stir until bubbly. Add the checkpeas and fet cheese. Continue stirring until the cheese melts, about 4 min. Season with salt and pepper.
- Remove from heat and let sit for 10 min.
