Dave's Veggie Soup Recipe

Makes 8 servings


No meat, no starch, but its still tasty!

Ingredients
56 ounces diced tomatoes
2 medium carrots
1 1/2 cups frozen corn
2 medium onions
1 tablespoon vegetable oil
1 tablespoon garlic powder
1 1/2 cup of frozen okra
Directions
  1. Empty the diced tomatoes into a 1.5 or large slow cooker on high.

  2. Add corn and garlic powder, and stir.

  3. Peel and chop carrots, and add to crock. Cut fine so they will cook faster.

  4. In a fry pan fry thinly sliced onions until brown.

  5. Add 1/4 cup water and simmer for 5 minutes.

  6. Add onion mixture to crock, and stir.

  7. Chop frozen okra, removin stems. Add to crock.

  8. Let cook for about 3 hours. Test carrots for doneness.

  9. Serve in 1.5 - 2 cup servings.
